Place the sugar, cinnamon, allspice, ginger and evaporated milk in a heavy saucepan and stir over a high heat for about 5 minutes, or until the sugar dissolves and the mixture reaches soft ball stage (115C / 238F on a sugar thermometer.) Remove the pan from the heat and stir in the nuts and the vanilla essence. Make sure all the nuts are coated, then pour out on to a sheet of greaseproof paper. Allow to cool, then break into chunks. Store in an airtight container. |
