My only visit to Italy was to Tuscany so here is a Tuscan recipe.

Patate al Forno

  • 900g new potatoes
  • salt
  • 3-4 cloves garlic, crushed
  • 5 tablespoons olive oil
  • salt & pepper
  • leaves from 2 or more sprigs of rosemary

Scrub and wash the potatoes well and boil in salted water till tender. Drain, cut them in half if they are large and put with the rest of the ingredients in a baking dish, turning them to cover them well with oil and the aromatics. Bake at 200°C (400°F, Gas 6) for 20 minutes or until golden.
